Classic Egusi Soup with Fufu

Ingredients

  • 1 cup NutriLion Ground Egusi
  • 2 tbsp red palm oil
  • 1 cup chopped spinach or bitterleaf
  • 1 stock cube
  • 1 scotch bonnet pepper, whole
  • Salt to taste

Method

  1. Mix ground egusi with a little water to form a paste.
  2. Heat palm oil, add the egusi paste in spoonfuls, and let it fry gently for 5-7 minutes.
  3. Add stock, pepper, and greens. Simmer 20 minutes until thickened. Serve with fufu.

Egusi Protein Smoothie

Ingredients

  • 2 tbsp NutriLion Ground Egusi
  • 1 cup almond or oat milk
  • 1 banana
  • 1/2 cup frozen strawberries
  • 1 tsp honey or maple syrup

Method

  1. Add all ingredients to a blender.
  2. Blend until smooth, about 45-60 seconds.
  3. Pour and enjoy immediately. The seeds settle if left standing.

Seed-Topped Garden Salad

Ingredients

  • 2 cups romaine lettuce, torn
  • 1 cup cherry tomatoes, halved
  • 2 tbsp NutriLion Whole Egusi, lightly toasted
  • Olive oil and lemon dressing
  • Salt and pepper

Method

  1. Toast whole egusi seeds in a dry pan for 2-3 minutes until lightly golden.
  2. Toss lettuce and tomatoes with dressing.
  3. Top with toasted egusi seeds just before serving for crunch.
